Grape varieties: 85% Grenache – 15% Syrah
Yield: 30 hl / ha
Vinification: Manual harvest with sorting in the vineyard and then in the cellar. Pre-fermentation maceration for 3 days. Alcoholic fermentation with very little extraction and long vatting. Gentle pressing and reinstatement of the presses with dripping wines according to tasting. Fermentation in thermo-regulated stainless steel vats.
Aging: 10-12 months: exceptional oak barrel of one wine (minimal impact of the wood) and a few demi-muids.
Tasting note: This bright red wine presents an olfactory purity with crunchy fruit which brings freshness and liveliness. The attack, full of spice, does not break down on its way to a fresh fruity and mineral finish.
