Its Chinese name means Lu An Watermelon Seed, referring to the shape of its harvested leaf. The manufacturing process is the most complicated among green teas, and requires obvious know-how. The last step involves very precise fire control; the leaves are placed in a large bamboo basket held by two men who carry it over a wood fire for 80-100 3-second cycles. The beautiful twisted leaves are a deep emerald green. It is the only green tea that is made only from the leaves, and has no buds or stems. The infusion offers a refreshing, vegetal and intense cup, slightly sweet, gradually passing to more flowery undertones. Invigorating and delicate, this silky tea deserves its title of ten best teas in China.
